It’s a family tradition dating back many generations in the Wotherspoon family (my husband’s side). After my very first Thanksgiving with Adam’s family, I quickly passed it on to my side of the family and friends. It was too good a thing to keep a secret, and I’ve never heard a bad thing about it. If you have never before been introduced to the concept of taking all your leftovers and putting them in a pie shell, then let me introduce you to Thanksgiving Leftover Pie. It’s like the sandwich but in a pie crust instead of bread.
You could be the best host/hostess of all time if you bought some extra pie crusts at the store (Trader Joe’s brand is my favorite) and put one of these together for your guests to take home. Ever since introducing this to my mom, she always appreciates this lazy Black Friday dinner which is ready for you to pop in the oven whenever you want it! Done and done!
The Hacks:
- Store-bought pie shell
- Store-bought gravy
- Store-bought cranberry sauce
- Pre-made Thanksgiving leftovers
Thanksgiving Leftover Pie
Use all the leftovers from Thanksgiving and a store-bought pie crust. No rules apply! It all goes in!
Ingredients
- Whatever leftovers from Thanksgiving you have
- Supplement with frozen veggies if needed
- Canned cranberry sauce
- Store-bought gravy
- Store-bought pie shell (frozen foods)
Directions
- Step 1 Defrost the pie shell and place the bottom shell into the pie dish. Layer in the leftovers in no particular order. Ingredients may include stuffing, turkey, green bean casserole, carrots, squash, cranberry, pearled onions etc… Try to make sure there is something of everything in every slice. Drizzle liberally with gravy, and top with the other pie shell. Roll the crust inwards and use your thumb print to make the crust pattern.
- Step 2 Refrigerate until you are ready to bake it.
- Step 3 When ready to bake, brush a little beaten egg onto the crust for color and bake according to box instructions.
